Savory Tomato & Tequila Martini
It's not NOT a margarita...is it?
This drink. I'm not sold on the name I gave it. It's like a margarita but only because of the tequila, and a martini in every other way. It's savory. Salty. Chilled. Downright delicious. It warrants chilling, straining and sipping but then that tequila creeps in and warms you up and tricks you into thinking maybe it's meant for tacos, I assure you-- it's not. There's no basil to distract, no mozzarella ciliegine pierced on a toothpick. This is a late afternoon sipper. A celebration of an August tomato. Is there anything better?
Ingredients
6 cherry tomatoes
2 oz tequila of your choice (I went with blanco for a really clean flavor but a little aged tequila might be a delight as well)
Salt, for cocktail and to rim glass
Method
In a martini shaker, muddle cherry tomatoes until juices release. Add tequila and continue stomping until all combined. Add a pinch of salt, fill halfway with ice and shake until outside of the shaker is frosty. Strain through fine mesh strainer (or cocktail strainer) into chilled martini glass rimmed with kosher salt.
